THE JOY OF BAKING
Royal Cake Studio is headed up by myself, Abbi Briggs, cake artist, sugar crafter, and cupcake creator. At an early age, I developed a passion for baking, growing up in a small town called Dunedin in New Zealand. I spent many school vacations with my Nana learning to grow fruits and vegetables, tending to the animals and learning to bake in an old style coal range.
The coal range was an integral part of any rural New Zealand home. It was the only heat source to heat the home, provide hot water and cook all of the family meals. Luckily for me, my Nana also baked the most amazing homemade bread, cakes, and desserts and shared many of her best-kept secrets along the way. Nana was a huge inspiration to me. She took her homegrown produce and turned it into something fresh and delicious. Many a day was spent picking berries and sterilizing old jars for jams and creating recipes from her childhood. Those fond memories have shaped me into the woman that I am today, passionate about good quality, gourmet ingredients and a love of baking.


Although the original coal range is no longer used,
It sparked a lifetime love of baking.
I have been fortunate to travel and sample a number of regional delights that have influenced my recipes at Royal Cake Studio. From Macarons in France, Scones in England, Lamingtons in Australia and now Red Velvet in America, each experience has developed my knowledge and expertise.
For the past 15 years, I worked in healthcare, baking cakes and gourmet treats as a hobby for colleagues, family, and friends. I am now married and settled in the US, and have taken the leap of faith, turning my passion for baking into a full-time profession. I am incredibly lucky to do what I love on a daily basis and to be a part of so many people’s memorable days. I look forward to working with you to create your dream cake.
